How to Make Tapey (Igorot Rice Wine)
Needs:
- half a pound of bubod
- a kilo of diket preferrably of the red variety
- a labba (or any wide space) to spread the rice to dry
- a gosi or any closed container
(Note: One of the most high-grade kind of bubod is available from the vendors of Abatan, Benguet. Don't try plastics as containers, they add a plasticky flavor.)
Ways:
Cook the kilo of diket with a little less water than you would cook an ordinay rice. Just after the boiling water has been absorbed (na-ilowagan), set aside the diket.
(Before continuing, tell everyone not to disturb you until everything as not to destroy the spirit of the tapey. The oldies even ask, 'Maid um-umtot' or 'No farting".)
Spread the diket on a labba covered with banana leaves (or just spread the diket around any open space) and wait until its a little bit dry. Crush the bobod into very fine powder. Then, spread the bobod evenly. (This is a crucial part - you have to do it very evenly. My mother told me that one of the secrets to a good tapey lies in the quality of the distribution of bobod in the diket).
Put this in your container and seal tightly. If you are in a cold place, put it in a warm location. (usually near the dalikan or in the corner of the house) Wait for at least 4-5 days, after which the tapey is now ready. Remember, the sweetness of the tapey decreases with time.

Dinengdeng RecipeIngredients
- 1 whole milk fish, sliced and grilled
- 2 to 3 cups malunggay (moringa) leaves, cleaned
- 2 cups squash flower
- 12 to 15 pieces small to medium sized okra
- 1 bundle string beans, sliced into 3 inch pieces
- 2 pieces medium ampalaya (bitter gourd), cored and sliced
- 2 to 3 tablespoons bagoong isda (unprocessed fish sauce)
- 1 knob ginger, sliced
- 2 medium tomato, chopped
- 1 medium onion, chopped
- 3 cups water
Cooking Procedure
- Bring water to a boil in a large cooking pot.
- Add the ginger, onion, and tomato. Cook covered for 5 minutes.
- Pour-in the bagoong isda. Stir.
- Add okra and string beans. Stir and add the ampalaya. Cook in medium heat for 7 to 10 minutes.
- Put-in the squash flower and malunggay leaves. Cook for 3 to 5 minutes.
- Add the grilled milk fish. Let it stay for 3 to 5 minutes to add flavor to the dish.
- Serve. Share and enjoy!

Ingredients
- ¼ lb pork, thinly sliced
- 1 large egg plant, sliced
- 1 medium-sized bitter melon, chopped
- ¼ lb squash, chopped into 2x1 inch cubes
- 3 pieces large tomato, sliced
- 1 piece onion, chopped
- 1 tbsp ginger, minced
- 3 cloves garlic, crushed
- 6 to 8 pieces okra
- 1 bunch string beans, cut in 3 inches length
- 4 tbsp shrimp paste
- 1 cup water
- 3 tbsp cooking oil
- salt and pepper to taste
Instructions
- Heat the pan and put the cooking oil.
- When oil is hot enough, saute the garlic, ginger, onion, and tomato
- Add the pork and cook until color turns light brown (about 5 to 8 minutes)
- Put-in the shrimp paste and cook for 2 minutes.
- Add water and bring to a boil. Simmer for 10 to 15 minutes or until pork is tender
- Put-in the squash and cook for 5 to 7 minutes or until texture becomes soft
- Add the remaining vegetables and mix with the other ingredients.Simmer for 5 minutes or until all the vegetables are cooked. (Do not overcook the vegetables)
- Serve hot with steamed white rice. Share and EnjoyY!
